Singapore's Marina Bay Sands Project Adds Top Chefs, Starts Accepting Meetings Bookings

The large-scale Marina Bay Sands development in Singapore moved a step closer to opening when it announced last week which six of the world’s best (and most famous) chefs it had chosen to open restaurants in the new mega-resort, casino and meetings facility.

Daniel Boulud, with 10 eateries in North America and Beijing; fellow New Yorker Mario Batali, owner or partner in no fewer than 15 restaurants across the country; and Los Angeles’ Wolfgang Puck, with fine-dining restaurants and multiple casual chain establishments throughout the United States, are the three U.S. chefs who have attached their names to the project.

Joining them are Santi Santamaria from Can Fabes in Barcelona; Guy Savoy, from his eponymous restaurant in Paris; and the Japanese-born Tetsuya Wakuda, now based in Sydney, where his restaurant Tetsuya’s is located.

There were no immediate details on the specs for the various eateries, but Boulud said a press conference for the announcement that his restaurant will be a DB Bistro Modern serving French food, with about 120 seats, including a decent-sized bar, where guests also can order food.

Michael Leven, president of Las Vegas Sands Corp., the owner and developer of the $5.5 billion Marina Bay Sands Singapore, added that the company is now taking meetings bookings for the space as well.

“The first small meeting will take place in April, with some good-sized ones booked for July and into the fall,” said Leven. “We expect to see meeting business really take off the following year. We’re now getting some serious enquiries for 2011.”

Leven added that a majority of the resort’s meeting and exhibition space will be made available when Phase I of the resort opens, currently scheduled for the end of Q1 2010. When completed, the development will include 1.3 million square feet of meeting space, including the largest ballroom in Asia—able to seat 6,600 guests for dinner, an exhibition hall for up to 2,000 expo booths and 45,000 delegates and 250 meeting rooms.

In addition to the meeting space and destination restaurants, the project will include:

•approximately 15 to 20 more dining establishments
•a 2,500-room luxury hotel
•Singapore’s first casino
•two theatres—The Lion King will be the resort’s first production, opening in September 2010
•an ArtScience Museum
•an indoor ice skating rink
•more than 300 shops, including a Louis Vuitton island store that will “float” on the water, Hermès, Chanel, Tiffany & Co., and other noted luxury brands
•and the crowing feature, the Sands SkyPark, a 1,200-foot-long green-space situated 650 feet above the ground on top of the project’s three high-rise towers. The park also will offer sweeping view of the Singapore skyline, three swimming pools (including an affinity pool), a restaurant and what will be the longest public observation cantilever in the world.
